Keto Shepherd's Pie

This is inspired by one of Rachel's favorite dishes from The Cheesecake Factory.   In this recipe I'm using ground beef, but I've also used it with ground lamb when its available at Penn Dutch.  Depending on what your carb requirements are, you can substitute the green beans with Edamame beans.

Ingredients

Meat (Beef, Lamb or combination of both)

  • 2 Tbls Butter We use kerrygold
  • 2 pounds ground beef (or use 1/2 lamb and 1/2 beef)
  • 1/2 cup fresh green beans, cut into pieces
  • 1/4 cup diced carrots
  • 1/2 onion (yellow)
  • 1 cup beef stock
  • 1 1/2 tsp pink salt we use this
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp rosemary
  • 1/4 tsp cayenne pepper
  • 1 tsp Xanthum Gum
  • 3 Tbls Heavy Cream
  • 1/3 cup shredded cheddar cheese (For the top)

Mashed Cauliflower

  • 1 large head cauliflower
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tsp minced garlic
  • 4 Tbls butter
  • 1/3 cup Heavy Cream
  • 1/2 cup grated parmesan cheese
  • 1/3 cup shredded cheddar cheese

Instructions

Cooking the meat

  • In a pan, melt butter and added diced onions.  Cook for 2 minutes until soft 
  • Add ground meat (beef, lamb or combo of both), salt, pepper
  • brown meat making sure to break it apart.
  • Chop up your green beans in small pieces (I cut each bean into 1/3rds.  Add carrots and green beans to meat mixture and simmer until veggies are soft.  
  • Add garlic powder, rosemary, cayenne pepper and mix
  • Add heavy cream, beef stock and Xanthum Gum.  Mix and simmer until it thickens (about 5 minutes)

Mashed Cauliflower

  • Steam cauliflower until soft.
  • Add hot, drained cauliflower to a food processor and puree.  You may need to stop the machine to push it down the sides.  (you can also use a potato masher)
  • Add butter, salt, garlic, heavy cream, parmesan cheese and cheddar cheese.  
  • Blend until smooth.

Cooking

  • Spread the meat mixture in a baking dish
  • Spread mashed cauliflower over the meat, making sure that you don't mix it in.
  • Bake in a 375 degree oven for 20 minutes or until edges begin to brown
  • Remove from oven and sprinkle 1/3 cup of cheddar cheese on top.  Place back in oven and broil for 2 minutes to melt cheese. (we like it crispy.
