Pizza Casserole

Lets face it, the best part of a pizza is the toppings, especially if you like supreme pizzas.  This recipe takes the best part of a pizza and turns it into a casserole.  It will work with any toppings so use your imagination and make it your own.

Ingredients

  • 3 cups cauliflower rice
  • 1/4 cup grated parmesan cheese
  • 1 egg
  • 2 tsp oregano
  • 1 tsp pink salt
  • 1/2 tsp garlic powder
  • 1 pound ground Italian sausage you can use any meat
  • 14 slices pepperoni
  • 1 cup mozzarella cheese, shredded
  • 1/2 medium green pepper
  • 1/4 cup mushrooms
  • 1 cup fresh spinach
  • 1/2 cup ricotta cheese

Instructions

  • Mix cauliflower rice with seasonings in a bowl and cook for 8-10 minutes in oven at 450 degrees, either on a baking sheet or in a casserole dish
  • Remove rice mixture from oven and allow to cool for a few minutes
  • Add egg and parmesan cheese to cauliflower rice and mix well
  • Spray bottom of casserole dish with some coconut oil.  Cover entire bottom with Cauliflower rice mixture
  • Cover the rice mixture with whatever toppings you want
  • Bake in oven for 8-10 minutes at 450 degrees

Notes

The nutrition on this is completely determined by your toppings. Try swapping the red sauce out for an Alfredo sauce to lower the carbs and up the fat. You can also use more meat and less veggies.
